CROISSANT DOUGH

Ingredients

  • CROISSANT 1000g
  • Whole grapes 125g
  • Granulated sugar 125g
  • Water 375g
  • Brewer’s yeast 50g

Preparation

LAMINATION
Combine the ingredients and work until a smooth and elastic dough is obtained. Let rest for 10 minutes, covered with a sheet of plastic. Incorporate Crystal Melange and perform 2 folds of 4. Let rest for 5 minutes, covered with a sheet of plastic. Shape into the desired size (about 20 g). Let rise for approximately 60 minutes, depending on the size. Once baked, glaze with sugar icing.

CITRUS CREAM
Mix Shine with water until a smooth mixture is obtained. Add the citrus zest and mix at high speed.
