CROISSANT DOUGH
Ingredients
- CROISSANT 1000g
- Whole grapes 125g
- Granulated sugar 125g
- Water 375g
- Brewer’s yeast 50g
Preparation
LAMINATION
Combine the ingredients and work until a smooth and elastic dough is obtained. Let rest for 10 minutes, covered with a sheet of plastic. Incorporate Crystal Melange and perform 2 folds of 4. Let rest for 5 minutes, covered with a sheet of plastic. Shape into the desired size (about 20 g). Let rise for approximately 60 minutes, depending on the size. Once baked, glaze with sugar icing.
