Amarena cherry treats

soft flour

egg whites

honey

Mix all of the ingredients in a mixer with the beater attachment for several minutes at a low speed. Leave to rest for 10 minutes. With moistened hands, form small spheres, encasing single well-drained amarena cherries and rolling in flaked almonds. Lay out on a baking tray and dust with icing sugar. Leave to rest for at least one hour, then bake in a static oven at 200°C or in a fan-assisted oven at 180°C without steam for around 7-9 minutes.
*For a richer version, substitute the soft flour with almond flour.
