CRESCENT MOON
Ingredients
- PAN DI SPAGNA 100 1000g
- Eggs 600g
- Water 200g
Preparation
CRESCENT MOON
Dome: Place the eggs and water in a planetary mixer fitted with a whisk. Add Pan di Spagna 100 and mix briefly at low speed until a homogeneous batter is obtained. Whip at high speed for about 10 minutes. Pour into a hemispherical mold until 3/4 full and bake in a static oven at 180°C for about 20 minutes. Let cool, then trim any excess to obtain a completely flat surface.
Filling:
Pastry cream: Pour the water and milk into a planetary mixer fitted with a whisk. Add Shine and mix at medium-high speed for about 3 minutes. Let rest a few minutes before use.
Assembly: Fill the dome with a thin layer of pastry cream and top with previously whipped cream.
Decorations: Decorate as desired.
