FRITTER BASE

Ingredients

  • ARLECCHINO 1000g
  • Water (40/50 °C) 1300g
  • Apple filling 1260g

Preparation

FRITTELLA BASE
Mix the mix and water in a planetary mixer fitted with a paddle attachment for 3–4 minutes at medium speed, until a smooth and homogeneous dough is obtained.

RICE FILLING

Ingredients

  • Milk 750g
  • Rice 375g
  • Sugar 50g
  • Grated lemon 1.5

Preparation

RICE FILLING
For the rice filling, bring the milk with sugar and lemon to a boil, add the rice and cook until done. Cool the mixture and combine it with the frittella base. Shape as usual and fry in oil at 180°C for a few minutes, turning the product several times.
