Preparation
Mix the ingredients in a planetary mixer fitted with a paddle attachment for 3–4 minutes at medium speed, until a smooth and homogeneous dough is obtained. Pour the dough onto trays lined with parchment paper. Bake in the oven at 190–210°C for 20–25 minutes depending on the size, with the vent open. Fill as desired.
