TURMERIC CROISSANT

Ingredients

  • Kurkuchìa 500g
  • Strong flour 500g
  • Eggs 150g
  • Sugar 150g
  • Water 300g
  • Crystal melange 25% cream-cake 50g
  • Brewer’s yeast 40g

Preparation

Knead all the ingredients for 5 minutes at low speed and 5 minutes at high speed, or until a homogeneous dough is obtained. Let rest at room temperature for about 10 minutes. Laminate with 3 single folds, let the dough rest for another 10 minutes, laminate again, and shape into croissants. Bake as usual.
