- Kurkuchìa 1000g
- Water 500g
- Extra virgin olive oil 50g
- Brewer’s yeast 30g
Preparation
Knead all the ingredients for 5 minutes at low speed and 5 minutes at high speed, or until a homogeneous dough is obtained. Let rest at room temperature for about 5 minutes, then shape into a small loaf, brush the surface with oil, and let proof until tripled in volume. Shape the breadsticks, place them on a previously oiled baking tray, and let proof for about 60 minutes. Bake with initial steam at 200–210°C for about 12 minutes.
To customize the dough, it is possible to add:
• 100 g of Parmigiano Reggiano
or
• 100 g of orange and lemon zest
