  • ARLECCHINO 1000g
  • Water (40/50 °C) 1300g
  • Apple filling 1260g

Preparation

FRITTELLA BASE
Mix the mix and water in a planetary mixer fitted with a paddle attachment for 3–4 minutes at medium speed, until a smooth and homogeneous dough is obtained.

APPLE FILLING

Ingredients

  • Apple 600g
  • Rum 12g
  • Raisins 210g
  • Cinnamon 18g
  • Grated lemon 1
  • Sugar 120g
  • Water 300g

Preparation

APPLE FILLING
Place all the filling ingredients in a small saucepan and cook until the mixture is well combined. Once ready, let it cool and combine it with the frittella base. Shape as usual and fry in oil at 180°C for a few minutes, turning the product several times.
