Knead all of the ingredients together at low speed for 5 minutes and then at high speed for 5 minutes or until the dough is even. Leave to rest at room temperature for approximately 5 minutes, then form a baton, oil the surface and leave to rise until tripled in volume. Shape the breadsticks, lay them out on a greased baking tray and leave to rise for around 60 minutes. Bake with initial steam at 200-210°C for around 12 minutes.

To personalise the recipe, the following may be added:

  • 100 g of Parmesan cheese

or

  • 100 g of orange or lemon zest
