Knead all of the ingredients together and rest the dough for 10 minutes, covered with a baking sheet. Gently form a ball, divide in a dough divider (for 100 g rolls, make a 3700 g ball), shape in the moulding machine, passing twice, and leave to rise for around 60-70 minutes. Bake with initial steam, letting the steam escape for the last 10 minutes.
