Knead all of the ingredients together at low speed for 5 minutes and then at high speed for 5 minutes or until the dough is even. Form a baton, oil the surface and leave to rest until doubled in volume. Shape the breadsticks by hand or using a machine, lay out on a baking tray and leave to rise for 45 minutes. Bake with initial steam for around 20 minutes, releasing the steam for the last 5 minutes.
