- PAN DI SPAGNA 100 625g
- Eggs 375g
- Lemon zest 13g
Preparation
Combine all the ingredients in a planetary mixer fitted with a whisk and mix at medium speed. Pipe the resulting mixture using a piping bag fitted with a #12 nozzle. Sprinkle with sugar granules and bake in a static oven at 200–220°C for 6 minutes.
